Vegan, Gluten Free and Delicious Brownie? Yes, Please!

This holiday season, try to skip the sugary cakes and choose homemade, healthy and delicious treats. We’ve got a special recipe for you! Gluten-free, sugar-free, egg-free brownie recipe and YES it is still super delicious.

 

What’s amazing about these healthy brownies is that they are very high in protein and fiber- 1 piece has 12 grams of protein and 9 grams of
fiber! This will help you feel full for a longer period of time and will definitely curb our sugar cravings during the holiday season.

Preparation & Cooking time:

55 minutes

 

Ingredients:

For the brownies: 

  • 1 cup of gluten-free quick oats
  • ½ tsp salt
  • 1 tsp baking soda
  • 3 cups kidney or black beans (canned or cooked)
  • ⅔ cup honey
  • ¼ cup coconut or olive oil
  • 6 tbsp. cocoa powder
  • ¼ cup dark chocolate chunks or chocolate chips

 

For the frosting:

  • 18 tbsp. low fat Cream Cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

For the decoration:

  • 12 strawberries 

 

Instructions:

For the brownies 

  1. Pre-heat oven to 180C and grease a 9×9 brownie pan with coconut oil or non-stick spray.
  2. Blend the oats until they form a “flour” consistency.
  3. Blend in the baking soda and sea salt.
  4. Rinse the black beans very well and shake off the excess water (This makes your brownies not taste like beans!)
  5. Add the rinsed beans, honey, melted coconut oil, and cocoa powder into a food processor.
  6. Blend until all the ingredients are creamy and smooth.
  7. Place in pan and spread out with a spoon and top with chocolate chunks/chips.
  8. Bake for 30 minutes and leave to cool for 5 minutes in the pan before slicing and serving
  9. Make sure to not over-bake! (Keep an eye on them—cooking time can vary wildly.)

 

For the frosting:

Beat together cream cheese, powdered sugar and vanilla until smooth.

For the decoration: 

  1. Cut the brownies in a square form 
  2. Spread the frosting on top
  3. Add a strawberry on top as indicated in the picture below to have a festive-like shape
